1.Brief Introduction of Garri Garri comes in various consistencies, which can roughly be categorized into rough, medium and smooth. There is also a variation in color; “white” and “yellow” garri. The yellow garri is prepared by frying with the addition of palm oil to give it a yellow color; while white garri is fried without palm oil. Garri is a fermented and gelatinized dry coarse flour, very popular in West Africa and a staple food in Nigeria, Ghana, Benin and Togo. It is
